Vine & Rind

Swipe, sip, repeat – it is where modern wine sampling meets technology. Contemporary wine bars are redefining taste and shifting the focus from simply serving wine to unique wine pairings and memorable experiences. Consumer preferences are also evolving to appreciate the atmosphere and aesthetics of a wine bar as part of those experiences.

Springfield's newest wine bar, Vine & Rind, hits all the notes on what is trending, including the integrated technology of self-serve wine dispensers that have put the customers in control. The space includes 24 self-serve wine stations offering 1 ounce, 3 ounce and 7 ounce pours.

Owner Chelsey Ziebler initially launched Ta Da Catering, specializing in custom charcuterie boards, before deciding to open a brick-and-mortar location with additional offerings. The front portion is retail space for wines and boutique liquor, along with a full-service deli to purchase meat and cheese by the pound. The rest of the space is more like a restaurant, offering small shareable plates and fondue in the evenings. There is also a selection of gourmet desserts, including cheesecake, made in-house.

Vine & Rind's evolving menu changes with the season but always offers dishes composed of fresh ingredients and new flavors such as the Tuscan Gnocchi al Gorgonzola or the Bayou Butter Shrimp, a New Orleans-style BBQ shrimp dish. Shareables are always a good option as are the signature charcuterie boards, bruschettas and decadent dishes that are paired perfectly with a complementing wine.

If you do not want to hang out surrounded by the bar's Mid-Century Modern décor (imagine the chic side of 1960s London), you can create your own wine and cheese experience at home with the retail selection of gourmet cheeses, meats, jams and wine-tasting essentials. Need to bring something to a party or family gathering? Simply utilize the drive-thru window to pick up a charcuterie board on the way.

Reservations aren't required – walk-ins are always welcome at the bar and high-top tables – but highly recommended, since word is already out that Vine & Rind is one of Springfield's best.
